These vegan waffles are delicious! Golden and crispy on the outside, light and fluffy on the inside. They’re also extremely easy to make using simple pantry staples.

Best of all, these waffles are gluten free! This gluten-free waffle recipe is so simple and requires only one type of flour, oat flour, which is easy enough to make at home. Place some oats in your blender or food processor and blend into a fine flour.

Mix the wet and dry ingredients in separate bowls and then mix them together just until combined. The secret to making perfect waffles is to let the batter rest for ten minutes. In the meantime, let your waffle iron heat up. This lets the oat flour soak up some of the moisture and make the waffle crisp and fluffy.

The batter should be fairly thick. If it’s too watery, add a few more tablespoons of flour and if it’s too thick, just add a little more water. Make sure not to over mix the batter, mix until everything is just combined. This will give you light and fluffy waffles. If making a batch, keep them in a warm oven (250ºF) until ready to serve. This will keep them crispy and hot.

Always preheat your waffle iron according to the manufacturer’s instructions. Spray the waffle iron with cooking spray (unless the waffle iron is truly non-stick). Pour some batter onto the hot iron. The amount will vary depending on your waffle iron and cook as directed until the waffle is golden brown on both sides. Let the waffle cook completely before removing to avoid sticking.   1. In a mixing bowl, mix together the dry ingredients: oat flour, baking powder, salt and cinnamon. In a separate bowl, whisk together the wet ingredients: almond milk, melted coconut oil, flax eggs, maple syrup and vanilla extract.
  2. Pour the wet ingredients into the dry ingredients. Stir gently until just combined (the batter should still be a little lumpy). Set aside and let rest for 10 minutes.
  3. Preheat your waffle iron to medium-high.
  4. After 10 minutes, spray the waffle iron with cooking spray (unless the waffle iron is truly non-stick). Stir the batter once or twice and pour some onto the heated waffle iron. Pour just enough to cover most of the centre area, close the lid and let cook. Once the waffle is deeply golden and crisp, transfer it to a cooling rack or baking sheet. You can keep your waffles warm by placing them in a 250 degree oven until ready to serve. Avoid stacking the waffles on top of each other because they’ll lose their crispness. Repeat with remaining batter.
  5. Serve the waffles with maple syrup, fruit or any other toppings of your choice and enjoy!
