Summer is on the way and light, fresh foods are my inspiration these days. I crave the lighter fare with the changing season. This Asian Salad is fresh, bright, crunchy and flavourful. A rainbow on your table. The crisp vegetables with a drizzle of peanut dressing is perfect as a vegan main or starter salad.

The secret to a winning, dynamite salad is not just a flavourful dressing but plenty of texture and crunch – this Asian Chinese Salad has it!  Red cabbage, snow peas, bean sprouts, romaine lettuce, orange bell pepper and green onions all drizzled with a vibrant peanut dressing and topped with roasted peanuts for maximum texture.

This chopped salad recipe is meant to be enjoyed and makes quite a bit so you can either graze on it throughout the day, or simply have a small portion and save the rest for later, drizzling on the dressing as required. It’s very high in nutrition, each serving is full of vitamins, minerals, protein and fiber!

Preparation is very simple – chop the vegetables, drizzle on the peanut dressing and enjoy!

  1. Prepare your vegetables, place in a large bowl. Pour the dressing over top and toss to coat. Top with sesame seeds and roasted peanuts. Alternatively, you can toss and serve adding a drizzle of dressing over top when plated.
