This healthy and very easy taco recipe is loaded with fresh flavour from the avocado lime salsa, cilantro and drizzled with my Peanut Sauce.

These fish tacos are so delicious with all the freshness from the raw crisp vegetables and lime. Then drizzle on that peanut sauce. I drench the fish with flavour and bake it in the oven – no frying! These healthy fish tacos are my favorite go-to meal. So quick and easy to make they come together in less than 30 minutes.

Season and bake the fish in the oven. Assemble the avocado salsa. Chop all the other fresh veggies and condiments. Add the tacos and sauce and place on a big platter in the centre of the table and let everyone assemble their own. Don’t be afraid to let it get messy!

- 8 Soft Tacos
- 8 Sole fillet Or any fish of your choice
- 2 Cups Lettuce chopped
- 1/2 Cup Fresh coriander /cilantro chopped
- 1 Avocado peeled, pitted and chopped
- 1 Cup Cherry tomatoes cut in half lengthways
- 1 Small red onion chopped
- 1-2 Limes
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Dry onion flakes
- 1/2 Teaspoon Dry Thyme
- 1/2 Teaspoon Himalayan salt (or pink salt)
- 1/4 Teaspoon Red chilli flakes Add the chillies as per your preference
- 1-2 Tablespoon Oil
- Peanut Sauce See the link to my Peanut Sauce above or use store bought sauce
- Sriracha sauce for drizzling Optional

- Preheat your oven to 400 degrees F.
- Line a baking pan with parchment paper and lay the fish fillets on the pan in a single layer.
- Mix oil, garlic powder, onion flakes, salt, dry thyme and chilli flakes in a small bowl, brush this onto both sides of the fish and bake for 8-10 minutes until the fish flakey and opaque. Remove from oven and set aside.
- Mix the avocado, red onion, cherry tomatoes in a medium size bowl and squeeze in the juice of one lime adding salt to taste.
- Layout the fish, avocado salsa, chopped lettuce, chopped coriander, tacos and sauce and let everyone assemble their own. Be messy and enjoy!
