BBQ Vegetables
An easy meal on any day, BBQ veggie skewers served with rice or quinoa.
  1. Peel and slice onions so they hold at the bottom.
  2. Slice zucchinis and peppers.
  3. Cut mushrooms in half lengthways.
  4. Cut eggplant in 1 inch squares.
  5. Cut tofu into 1 inch squares.
  6. In a large bowl, add oil and spices. Mix well.
  7. Add vegetables and blend well until all vegetables are covered with spice mixture.
  8. Skewer onto either metal skewers or wooden ones that have soaked in water for several hours.
  9. Cook on medium heat on the BBQ. Turning frequently.
  10. Serve with rice, quinoa or over lettuce.
